Having chilli oil in your kitchen cupboard is a must if you’re a fan of chilli heat. Made simply from oil infused with dried chilli peppers, this smooth, flavoured oil delivers a piquant punch. A key ingredient in Sichuanese cuisine, it features in a number of classic dishes such as hot-and-numbing chicken slices or dan dan noodles. A versatile condiment, it can be added to stir-fries, used in salad dressings or served as a dipping sauce to accompany dumplings and noodle dishes.

Lee Kum Kee was founded by a cook from Guangdong village who discovered oyster sauce in 1888. Known for the range and quality of its Chinese sauces, the company is now a global brand, widely used in Chinese restaurants around the world.
